Instructions

1. Partially thaw frozen strawberries, if using. Mash strawberries slightly to break up; set aside.

2. In a large saucepan, combine sugar and gelatin. Stir in milk. Cook and stir over medium heat until mixture just starts to boil. Remove from heat. Whisk about 1 cup of the hot mixture into beaten eggs; return all to saucepan. Cook and stir for 1 to 2 minutes or until an instant-read thermometer registers 175 degrees F and mixture coats the back of a clean metal spoon. Do not boil. Stir in strawberries, raspberries, and orange juice concentrate. Cover and chill for 4 to 24 hours. (Mixture will be very thick after chilling.)

3. Transfer the mixture to a 4- or 5-quart ice cream freezer; freeze according to the manufacturer’s directions. If desired, ripen. Makes 2 1/2 quarts, 20 (1/2-cup) servings.

1. Preheat your oven to 350F. Combine all your dry ingredients, then add wet ingredients and combine well.

 2. Form your cookies on a parchment paper-lined baking sheet. Add an indent in the middle of each cookie using your finger.

Instructions

1. Preheat your oven to 350F. To make your crust, grind 1/4 cup of flaxseeds until they become mealy. Add the rest of your crust ingredients to the flaxseeds and mix thoroughly. Press crust mixture into the tart pans and up the sides.

2. Bake in the oven for about 8 minutes or until set. While the crust is baking, combine all the top layer ingredients in a small blender until smooth. Once the crusts are out of the oven, let them cool. Melt peanut butter and butter in the microwave or a small pan over the stove until soft.

3. Pour the melted peanut butter layer onto your tart crusts and place in the fridge for about 30 minutes until the top is set. Once the top of the peanut butter layer is set, add the chocolate avocado layer on top and smooth out. Place in the fridge for another 30 minutes and serve!

1. Preheat oven to 325 degrees F and tightly wrap bottom of 9-inch spring form pan with heavy- duty aluminum foil.

2. Place chocolate in microwave safe bowl and microwave on med. power for 1 min. Stir. Microwave at 30 sec. intervals until chocolate is smooth. Let cool.

3. Meanwhile, beat cream cheese in mixing bowl until fluffy, using electric mixer at low speed. Gradually add splenda and beat until blended. Add eggs, one at a time, beating after each addition.

4. Dissolve salt in hot coffee. Beat in vanilla and melted chocolate until blended.

5. Pour mixture into pan and place in a roasting pan Pour hot water into roasting pan until the water comes up to about half way up the side of the spring form pan. Bake for 55 to 60 min. or until center is firm.

6. Leave cheesecake in oven with the door door open and let cool in oven for 1 hour. Remove cheesecake from roasting pan. Cool cheesecake in the pan on wire rack. When cheesecake is cooled, cover with aluminum foil and chill at least 6 hours or overnight. Then remove sides of spring form and cut into 12wedges.

1. Preheat oven to 350 degrees F (175 degrees C). Line 12 muffin cups with paper liners.

2. Mix almond meal and butter together in a bowl; spoon into the bottoms of the paper liners and press into a flat crust.

1 (3-ounce) box sugar-free lime gelatin, (i only use 1/2), 1 (8-ounce) box Neufchatel cheese, (softened), 1 lime juice, 1 cup unblanched sliced almonds, 4 tablespoons butter , melted, 2 g splenda sugar substitute (or2 individual packets), 2 tablespoons sugar-free cool whip, 1 lime (to garnish)

Instructions

1. Preheat oven to 350°F.

2. In a food processor add the cup of raw almonds, pulse until it is the size of sand granules (not too fine!). Add in the 2 packets of Splenda and the 4 tablespoons of melted butter. Pulse until it is well mixed and a workable paste.

3. Spray a small, square baking dish with cooking spray and with a spatula, add in the mixture and pat until evenly spread.

4. Put in oven for 10-12 minutes; broil on top for another 1-2 minutes. Be careful that it doesn’t burn; it should be a toasted brown. Once done, take out of oven and put in the freezer.

For the filling:. 1. In a food processor, add 1/2 package of lime Jell-O; follow the directions on the box and then pulse in the food processor until well mixed.

2. Add in 1 juice of lime as well as some zest from the peel. Add in the softened Neufchatel cheese. Pulse until well-mixed, should be a thick liquid mixture.

3. Add the filling on to your crust and smooth until even and put it back into the freezer for about 1 hour

Garnish with sliced lime and sugar-free cool whip and serve!
